Giblet Broth
Ingredients
2 sets giblets
1 teaspoon salt
1 quart water
2 tablespoons sago
Few cloves
1 onion
1 blade mace.
Method
Prepare and wash giblets thoroughly. Cut into small pieces, place in a saucepan with water, cloves, mace, and salt and bring slowly to the boil. Peel, wash, and cut onion into thin slices. Add to ingredients in saucepan and simmer gently for 2 hours, then strain. Wash sago, soak for 10 minutes and add to the broth. Continue boiling for another 15 minutes. Serve hot.
Handy Hint -If melting full cream butter then try adding a few drops of good cooking oil and this should stop the butter from burning.
Giblet Soup
Ingredients
2 sets of giblets
1 carrot
1 turnip
1 onion
1/4 head celery
1 blade of mace
Bunch herbs
2 cloves
6 peppercorns
2 quarts stock
1 1/2 oz butter
1 1/2 oz flour
Salt and pepper
Method
Clean and scald giblets, cover with cold water and bring to the boil. Prepare vegetables in small dice and put in a saucepan with stock, giblets, herbs, spices and simmer for 2 hours. Strain and remove fat. Brown butter slightly in pan and add flour. Stir till smooth and golden. Add strained soup. Stir till boiling. Cut best pieces of giblets into small pieces and add to soup. Simmer 20 minutes, skimming now and then. Add squeeze of lemon juice and salt and pepper to taste.
Handy Hint -By washing stockings in water with a little fabric softener will prevent static.
Steak and Kidney Pie
Ingredients
2 lbs bladebone steak
2 kidneys
1 large onion
1 tablespoon flour
Pepper and salt
Pastry
Method
Remove all fat from meat and cut into pieces, 1/2 inch square. Remove skin from kidney and cut into small pieces. Add onion (cut up roughly). Nearly cover with cold water. Mix flour (and a teaspoon of gravox if lied) in a cup into a paste with cold water. Add to meat, kidney, onion and water in saucepan. Season with pepper and salt. Bring to boil then allow to simmer gently for 1 1/2 hours, or till meat is tender. Place on pie dish. Cover with pastry and bake in oven until pastry is golden brown.
Handy Hint -The ultimate time to fertilise your lawn or garden is during normal raining periods. Pelleted chook manures or Blood and Bone are ideal.
Beef Kidney Stew
Ingredients
2 lbs beef kidney
1 green pepper
1 large onion
Salt
Flour
Parsley chopped
Whole pepper, cloves
2 bay leaves
1 tablespoon vinegar or lemon juice
Method
Cut kidney into small pieces, removing white tubes and fat. Cover with cold water for 1 hour. Drain and put in pan, cover with hot water, add salt to taste, few whole peppers, cloves, bay leaves, sliced onion and chopped green pepper and simmer until tender. Thicken by adding flour enough to make gravy. Add vinegar or lemon juice and chopped parsley and cook 15 minutes longer. Serve with noodles.
Handy Hint -Cuts of meat slice very easily and true, if cut whilst a little frozen.
Liver Croquettes
Ingredients
2 cups breadcrumbs
1 teaspoon butter
3 strips of Bacon (chopped, crisp)
2 cups calf's liver (fried and minced)
Salt and pepper
Hot water to moisten
Method
Mix all the above ingredients together, roll in egg and crumbs and fry in deep fat. Serve with tomato sauce.
Handy Hint -SERIOUS ADVICE for all.........Dust Masks are simply that, a mask that will filter out most airborne dust, depending on the quality. Do not attempt to "filter out" any spray paints, chemicals, garden sprays, odours, etc. Use recommended respirators only.
Spaghetti and Kidney Pie
Ingredients
4 oz fine spaghetti
1 1/2 oz butter
1 oz flour
A little seasoning
2 kidneys
1/2 pint milk
Some breadcrumbs
Method
Break up spaghetti and boil it in salted water for about 20 minutes. Melt butter, add flour, mix well. Add the milk, mixing it slowly and smoothly. Let sauce boil for 5 minutes, season it, add strained spaghetti and put it into a buttered pie dish. Chop up kidneys, fry in dripping and spread over the spaghetti. Over this sprinkle the breadcrumbs thickly. Put a little butter o top and bake it in the oven until it is slightly browned. A little cheese can be mixed with the crumbs to improve them, and a chopped onion can be added to the sauce.
Cooking Hints - For a real flavour-some Steak and Kidney Stew or Pie, add a good tablespoon or two of tomato sauce and stir through whilst lightly simmering.
Curried Tripe
Ingredients
1 lb tripe
1 small apple
1 small onion
1 dessertspoon curry powder
1 dessertspoon flour
1/2 teaspoon salt
1/2 pint stock or water
1/4 teaspoon pepper
1 small tomato
1 teaspoon lemon juice
1 dessertspoon clarified fat or butter
3 oz boiled rice
Method
Remove fat from tripe and wash in warm water. Cut into 2" squares. Peel apple and onion and mince finely. Mix curry powder, flour, pepper and salt together. Melt fat in small saucepan; make it very hot and fry apple and onion till a light brown. Add the tomato cut very small, and fry 3 minutes longer. Then add the flour and other ingredients and stir till smooth. Add stock and stir till boiling. Put tripe in and simmer gently 1 hour or till tender. Add 1 teaspoon of lemon juice just before serving. Serve with a border of boiled rice.
Handy Hint -By rubbing hand soap over the mirror in your bathroom and then polishing with a soft cloth, steam will not build up.
Kidneys On Toast
Ingredients
1/2 dozen sheep’s kidneys
1 dessertspoon chopped parsley
1 tablespoon chutney
Salt and cayenne
1 tablespoon butter
1/2 dozen Slices of toast
Lemon juice.
Method
Soak kidneys in warm salted water for 30 minutes. Skin and cut in slices. Mix all ingredients except parsley together. Spread on kidneys. Grill 10 minutes, turning once only. Serve on slices of toast and sprinkle with finely chopped parsley.
Cooking Hints - For tasty mashed potatoes and pumpkin add a little powdered onion soup to the pot while cooking.
Tripe Roll
Ingredients
2 lb. dressed tripe
Salt and pepper
4 large potatoes
Nutmeg
1 tablespoon chopped onion
A little flour
1 tablespoon parsley
Oil
2 cups white breadcrumbs
Tomato sauce
2 oz. Cooked ham
Bacon strips
Method
Choose tripe in one piece and in a shape suitable for rolling. Blanch once and boil till tender. Boil and mash potatoes, add onion, parsley, breadcrumbs, and ham finely chopped, salt, pepper, and a good pinch of nutmeg. If too dry add a little milk to bind. Spread mixture on tripe, roll tightly and tie with string. Roll in flour, dip in oil, and then roll in flour again. Put strips of bacon on top of roll and bake in a hot oven 1 hour. Serve with tomato sauce.
Cooking Hints - If a claimed "Australian" recipe refers to "shrimp", it is not authentic Australian.
Tripe Sausage
Ingredients
1/2 onion
2 lb. dressed tripe
1/2 oz. butter
Flour
1/2 lb. pork sausage meat (can be stripped from sausages)
1 egg
Salt and pepper
Breadcrumbs
Worcester sauce,
Method
Chop onion and fry in butter till golden brown. Add sausage meat seasoned with salt and pepper and stir over fire till partially cooked. Add extra seasoning if desired and a little Worcester sauce, mix well and turn out to cool. Cut tripe into strips about 5 inches by 3 inches, spread with sausage mixture, keeping it a little distance from edges, roll tightly and fasten with toothpicks or matches. Dip in flour, egg, and breadcrumbs and fry till golden brown.
Handy Hint -If you add a couple of drops of lemon juice to the water when boiling rice, this will help to prevent the rice from sticking together.
Brain Croutes
Ingredients
2 tablespoons cooked brains
1 teaspoon chopped capers
1 tablespoon white sauce
Cayenne and salt to taste
1 tablespoon grated cheese
Buttered toast
1 egg yolk
Method
Dice brains then heat in sauce, add cheese, capers, cayenne, and salt, lastly yolk of egg. Pile onto rounds of buttered toast, sprinkle more cheese on top, brown under griller and serve very hot, daintily garnished.
Cooking Hints - For delicious cheesy mashed potato, add a desired amount of grated tasty cheese whilst mashing.
Brain Savoury
Ingredients
2 sets brains
Pepper
Salt and sugar to taste
6 slices bacon
1/2 cup breadcrumbs
2 tomatoes
1 teaspoon butter
2 oz. grated cheese
Method
Prepare and cook brains, steam bacon over hot water for a few minutes, arrange bacon in bottom of pyrex dish, and put brains on top. Fill in sides and centre with sliced tomatoes, sprinkle with a little salt, pepper and sugar. Place grated cheese on top and sprinkle with breadcrumbs. Place little pieces of butter on top and bake in a moderate oven till brown.
Fried Sweetbreads and Tomato Sauce
Ingredients
Sweetbreads
1 egg
1 dessertspoon flour
2 tablespoons breadcrumbs
Salt and pepper
Bacon rolls
Sauce
Good teaspoon butter
1 bay leaf
2 tomatoes
Thyme and parsley
1/4 white onion
1/2 pint stock
1 stick celery
1 oz. arrowroot for thickening sauce
Bacon rind
Method
Prepare sweetbreads, roll in seasoned flour, dip in egg, then in breadcrumbs, wet fry a golden brown. Grill bacon rolls. Make tomato sauce by heating butter and frying vegetables in it, add seasonings and stock, cook 30 minutes, then strain and add thickening. Cook 3 minutes, serve on a hot dish with the bacon rolls and with tomato sauce poured round it or served separately in a warm sauce boat.
Cooking Hints - When a recipe includes "ketchup", it is not of Australian origin.
Fried Brains and Bacon
Ingredients
2 sets of brains
4 strips of bacon
1 dessertspoon flour
1/2 teaspoon salt and pepper
1 egg, slightly beaten
Breadcrumbs
1 teaspoon vinegar
Method
Wash brains and soak in salted water. Pick off as much skin as possible. Cover with clean water and bring to boil, with vinegar. Drain off water. Cover again with cold water and simmer 5 minutes. Put out to cool. Roll in flour, dip in egg and toss in breadcrumbs. Fry till brown on both sides and serve with bacon, which can be cooking in the oven.
Country Tripe and Onions
Ingredients
2 lbs thick coarse honeycomb tripe
2 small onions
Milk
Parsley
1 dessertspoon butter
Pepper and salt
Method
Wash tripe well and soak in warm salted water for 1 hour. Drain off water. Cut in pieces 1 inch square. Cover with cold water; add onions (cut in large pieces), pepper and salt. Bring to boil, and then simmer till tripe is tender (about 2 hours). Strain off water. Cover with milk and heat. Thicken with blended flour; add pepper, salt and butter. Stir till it boils and thickens. Add some chopped parsley.
