Delicious Salads

The Australian Bilby

Bilbys are today sparsely populated in Australian regions of the Tanami desert in the Northern Territory, in the Gibson and Great Sandy Deserts of the Northern Territory, the Pilbara and Kimberley areas of Western Australia and the Mitchell Grasslands of Queensland. Bilbys are marsupials, members of the bandicoot family, and feed on seeds, insects, fruit, etc. Growing to a length of over 50cms they are very much a protected species throughout Australia.

 

Helpers

1 gill = 1/2 cup

Scant = Not quite full measure

Red or Green Pepper = Capsicum

Fats, dripping, lard, etc can be substituted with your selected oils.

Unless specified otherwise, all temps are in Fahrenheit

Flour = Unless otherwise stated, "flour" refers to plain flour.

All oven temperatures are based on the standard wood oven, gas oven and electric oven.

Rice Salad

Ingredients

1 cup rice cooked in boiling water with 1 packet chicken noodle soup and spread on a shallow dish to dry.

2 tablespoons sultanas

2 tablespoons chopped onion or spring onion

2 tablespoons chopped parsley

2 tablespoons mild green or red pepper

2 tablespoons celery

1 dessertspoon preserved ginger

Method

In a screw top jar or similar add 1 crushed clove garlic, 1 teaspoon salt, 1 teaspoon curry powder, 1 teaspoon dry mustard, 1 teaspoon sugar, 1/2 cup white vinegar, 1/2 cup olive oil, shake well and mix through salad

Brown 2oz blanched almonds in oven and toss over top, prawns, chicken pieces, ham or any cold meat may also be added.

 

 

HANDY HINT-The next time you clean various areas of your bathroom, try using White Vinegar straight from the bottle or slightly diluted with water.

 

 

Golden Glow Salad

Ingredients

15oz can of crushed pineapple

2 cups grated carrot

1 small grated onion

1 dessertspoon gelatine

2 cups water

1 packet lemon jelly

Method

Put juice off pineapple and 1 cup water on stove to simmer and add jelly crystals, dissolve gelatine in 1 cup hot water and add to jelly, let cool, add carrot and pineapple, put in refrigerator to set and garnish with peas, tomatoes, cucumber pieces etc.

 

Potato Salad 

Ingredients

10 cold potatoes

3 tablespoons vinegar

2 tablespoons olive oil

Pepper and salt to taste

1 dessertspoon chopped parsley

1 small onion, finely chopped 

Method

Cut potatoes in slices about  1/4" thick. :Put in salad bowl with oil and vinegar; season with pepper and salt; add parsley and onion. Then mix lightly together, being careful not to mash potatoes. Set aside for about 1 hour before serving.

 

 

HANDY HINT-Use a lint remover roller on cloth lamp shades to remove all dust and fluff.

 

 

Carrot Salad

Ingredients

2 lbs cooked sliced carrots

1 large sliced onion

1 green mild sliced pepper

1 teaspoon black pepper

1 teaspoon

Mustard

1 cup sugar

1/4 cup vinegar

1/2 cup French salad dressing

1 teaspoon Worcestershire sauce

1 can tomato soup, puree or juice

Method

Mix all ingredients carefully together and let stand for 12 hours. Will keep in refrigerator for several weeks

 

Curried Rice Salad

Ingredients

1 red pepper

2 sticks celery

3 shallots

1 red apple

3 cups cooked rice

1/2 cup sultanas

1/2 cup mixed chopped nuts

Sauce

2 tablespoons French dressing

1 tablespoon lemon juice

1 tablespoon brown sugar

1 tablespoon curry powder

Salt and pepper

Method

Toss all the salad vegetables, nuts and rice together, place sauce ingredients in screw top jar, shake well, add to other ingredients and mix well, chill and serve.

 

 

HANDY HINT-A strong solution of Borax and water will remove baked on stains from Pyrex dishes when soaked in overnight.

 

 

Kidney Bean Salad

Ingredients

1 can kidney beans washed and drained

1 small chopped onion

1 cup chopped celery

1 large skinned and chopped tomato

1 cup bean sprouts

2 chopped hard boiled eggs

2 tablespoons chopped

fresh herbs, your selection

2 tablespoons good oil

1 tablespoon vinegar

2 tablespoons yoghurt

salt and pepper

Method

Combine all ingredients and toss lightly

 

Apple and Celery Salad

Ingredients

2 tablespoons condensed milk

1/2 teaspoon sugar

1/8 teaspoon salt

1/2 teaspoon mustard

Pinch cayenne

3 dessertspoons vinegar

1/2 gill cream or milk

2 eating apples

1 head white celery

Curled celery

Chopped nuts

Method

Place condensed milk in a basin with sugar, salt, mustard, and cayenne, add vinegar gradually, stirring well, then add cream or milk slowly and mix well, peel apples, wash and dry celery, cut all into dice, mix together, and pour salad dressing over, serve in a salad bowl, garnished with curled celery (see below) and chopped nuts.

To Curl Celery

Wash and dry some sticks of young white celery, cut into inch lengths and cut each piece half way down several times, place in a basin of cold water for 15 minutes.

 

 

HANDY HINT-Fresh fruit juices are easily frozen and saved for winter months for cooking or drinking. Always use sterile containers. 

 

 

Capsicum Salad

Ingredients

Some capsicum

Lettuce leaves

A mixed salad

Salad dressing.

Method

Wash capsicum. Cut tops off flower end and remove centre. Fill with a mixed salad. Serve on a bed of lettuce leaves. Garnish daintily. Serve salad dressing separately.

Cheese And Potato Salad

Ingredients

1 lettuce

Finely chopped mint

1 oz. Diced cheese

1 dessertspoon grated cheese

1 tablespoon cold potato

Mild Chilli

1 tablespoon cooked peas

Gherkin

1 tablespoon cooked diced carrot or grated raw carrot

Mayonnaise.

Method

Arrange 2 or 3 lettuce leaves and some shredded lettuce on a dish. Lightly pile diced cheese, potato flavoured with mint, peas, and carrot on lettuce in separate heaps. Decorate with grated cheese, chilli, and gherkin. Serve mayonnaise separately.

 

 

HANDY HINT-For a refreshing summer drink, pour a glass of iced water and add a good squeeze of fresh lemon or a good squeeze of orange.

 

 

 Corsican Salad

Ingredients

1 large tomato

Lettuce

2 tablespoons mayonnaise

1 small tin sardines

1/2 cup chopped cucumber or celery and gherkin

Chopped parsley

Capers or an onion

1 lemon

Method

Peel and slice tomato. Mix with mayonnaise and cucumber. Pile in centre of lettuce leaves arranged on glass dish. Arrange sardines across top of salad. Sprinkle with chopped parsley, capers, or onion. Garnish with slices of lemon.

 

Mint Salad

Ingredients

1 oz. Gelatine

2 tablespoons white sugar

1/2 pint water

1 gill white vinegar

2 tablespoons chopped mint

Green colouring

Salad ingredients.

Method

Soak gelatine in half the water. Place chopped mint in saucepan with rest of ingredients. Bring to boil. Add dissolved gelatine. Strain and cool. Pour into a shallow glass and allow to set. Decorate edges with salad ingredients such as curled celery, lettuce leaves, etc.

 

 

HANDY HINT-Unwanted VHS tapes in Australia are recyclable (hard plastic). Simply dispose of in your normal council container.

 

 

Orange And Onion Salad

Ingredients

1 orange

Parsley

3 or 4 lettuce leaves

1 medium tomato

1/2 finely sliced white onion

Salad dressing

Dressing

1 tablespoon sugar

1 tablespoon vinegar

Pinch mustard

1 tablespoon cream

Pinch salt.

Method

Peel and slice orange and arrange in bowl with lettuce leaves and sliced onion. Garnish with parsley and tomato. For dressing, mix sugar, mustard, and salt together, and add vinegar and cream alternately and gradually, stirring all the time.

NOTE

1 tablespoon of condensed milk may be substituted for the cream. If this is done, the sugar should be reduced to 1 teaspoon.

 

Pineapple And Cheese Salad

Ingredients

4 slices pineapple cut about a 1/2 an inch thick

1/4 1b. cheese cubed

1/8 teaspoon salt

Small lettuce

1 apple

Some curled celery

Squeeze lemon juice

Gherkin

2 pieces white celery

Mayonnaise,

Method

Sprinkle pineapple slices with salt. Core apple and remove centre, leaving shell only. Squeeze lemon juice on apple shape. Cut apple and pieces of celery finely and mix with half the cheese. Fill apple shape with mixture. Arrange lettuce leaves on a dish and place on them pineapple slices and filled apples. Decorate with cheese fingers or grated cheese, celery curls and gherkin. Serve mayonnaise separately. This salad is sufficient for 4 people.

 

 

HANDY HINT-If your painted or plastic outdoor furniture is showing signs of mould, spray a mild solution of bleach over the area, leave for ten minutes then wash off with clean water. Re-apply if necessary. Test a small under area first.

 

 

Pineapple And Cream Cheese Salad

Ingredients

Lettuce leaves

Parsley

1 medium slice fresh pineapple

Gherkin

1 oz. Cream cheese

Chilli

Thousand Island dressing.

Method

Arrange a bed of lettuce leaves on a dish. Place a slice of pineapple in centre. Pile cream cheese on pineapple. Pour Thousand Island dressing over cheese. Garnish with parsley, gherkin, and chilli.

 

Stuffed Tomato Salad

Ingredients

Some apple-shaped tomatoes

Some finely chopped cucumber

Cream cheese

Celery

Salt and pepper to taste

Chopped shallots

Parsley

Method

Divide each tomato into sixths and cut half way through to base. Push sections out like flower petals. Mix together cream cheese, cucumber, celery, shallots, and salt and pepper. Fill each tomato centre. Sprinkle with finely chopped parsley.

NOTE

Other fillings, such as brains, chicken, or cooked vegetables may be substituted for the cream cheese filling.

 

 

HANDY HINT-Do not place meat products in your garbage to smell and rot. Dig a deep hole in your garden and dispose of there. A good natural fertiliser.

 

 

Tabulee Salad

Ingredients

1/4 cup bulger wheat

1 cup parsley

1 teaspoon vegetable oil

1/2 cup hot water

1 shallot

1 teaspoon lemon juice

1 tomato

1/2 cup mushrooms sliced

salt and pepper,

Method

Pour boiling water over wheat and let stand until light and fluffy. Drain any excess water completely then combine all ingredients carefully together.

 

Creamy Potato Coleslaw

Ingredients

1 lb cooked diced potatoes

1 capsicum sliced

1 onion sliced

1/2 small shredded cabbage

1 stick celery sliced

Method

Carefully toss together.

Dressing

1/2 cup mayonnaise

1/4 cup French dressing

1 teaspoon French mustard

Mint chopped

Method

Blend well and pour over salad.
